What to cook for a child with diabetes's birthday?

Birthday is one of the most long-awaited holidays of childhood, which for a child with diabetes can be ruined by a banal menu. Many children with this disease are on a lifelong diet, on which their life and health depend. But what to do if you want to invite friends, but you can’t eat regular dishes? Do not panic and do not cancel the celebration, but remember what is tasty and healthy - these are not antonyms and there are very interesting recipes.
Most children with diabetes lead a normal active lifestyle, following only a few rules: a minimum of fast carbohydrates, a normal ratio of KBJU in each meal, and the care of loved ones. And for those who don’t know what to feed the most demanding guests, we recommend trying the following recipes.
Cauliflower pizza
One of the most popular dishes among kids is pizza. But who said that it must be made of dough? Try to cook according to our recipe and give a child with diabetes a piece of this dish, and he will no longer want regular pizza.
What is included in pizza:
- 2-3 green onions;
- 3-4 sprigs of parsley;
- salt to taste;
- 3 tbsp. l tomato paste;
- 100 g tomatoes;
- 100 g of ham or some kind of meat;
- 1 egg;
- 500 g cabbage.
This amount of food will easily yield 3 servings. Preparing the recipe must begin by peeling the cabbage. Then take it apart and blend it with a blender. It is recommended to squeeze out excess moisture from the resulting slurry, and then add egg, salt and grated cheese to the dried mixture. Mix everything and place the cakes on parchment paper. Preheat the oven to 180 degrees, and while it is heating up, cut the filling. Place the first layer of tomato paste, followed by sausage, vegetables and cheese. Bake the finished pizza for 20 minutes, then let cool and serve.
Chicken shish kebab in the oven
If you want to cook a child with diabetes something unusual, make a kebab of chicken fillet and vegetables. For this recipe you will need:
- 700 g chicken fillet;
- 1-2 sweet peppers;
- 12 champignons;
- 1 onion;
- 100 ml soy sauce;
- 2-3 cm of ginger root;
- 3-6 cloves of garlic;
- 1 tablespoon of starch;
- 1/3 spoon of salt;
- 2 tablespoons olive oil.
To prepare a child with diabetes shish kebab according to our recipe, cut the fillet into cubes, add peeled garlic and ginger to soy sauce as a marinade, and add starch there. Leave the meat in the resulting mixture for 2-3 hours. Cut the remaining vegetables into cubes and preheat the oven to 180 degrees. While it is heating, thread all the ingredients onto skewers after soaking the wooden holders for 5 minutes. Bake for 30 minutes, then let cool and enjoy.
Dessert “Bounty”
Every child with diabetes is first and foremost a child, so sweets must be on the holiday table. Therefore, we recommend trying to make PP candies using a new recipe. For this you will need:
- 140 g coconut flakes;
- 60 g milk powder;
- sweetener;
- 140 g chocolate;
- salt and vanillin to taste;
- 15 g sunflower or coconut oil.
According to the recipe, mix coconut flakes, milk powder and sweetener in a bowl. Pour milk over it all, stir and place the mixture in a mold to cool. Keep in the freezer for 30-60 minutes. Then separate and place in the freezer. Melt the chocolate in a steam bath and dip the frozen bars into it. Let it harden and you can eat.
